Amarone della Valpolicella is the prized wine from the Veneto region of Italy, made with passito (dried) grapes. It’s produced from a blend of 40 - 70% Corvina, 20 - 40% Rondinella and 5 - 25% Molinara varietals. The word “amaro” is Italian for bitter. While the wine is far from that, the name most likely derived to distinguish it from its sweet sibling, Recioto della Valpolicella. Both versions were awarded DOCG, the superior labeling status, in 2009.

Amarone has been produced in the Veneto for centuries. The Greeks first inhabited the area, and likely introduced the Romans to “straw wine,” the process by which it is produced. Ripe, hand selected grapes are laid on straw mats to dry out before pressing for juice. By this time, natural sugars and flavors have reached maximum concentration, creating wine of deep complexity. The wine fell out of fashion for a time in the early part of the 20th century. But around the 1950s, producers rediscovered the technique, which added depth compared to what had been otherwise thin productions of standard Valpolicella.

The modern production technique consists of picking the grapes in whole bunches and leaving them to dry on steel pallets (straw is now passe) in warm temperature and low humidity controlled chambers. This process means less chance of bruising or inviting the onset of Botrytis cinerea, the “noble rot” which can raise sugar levels too high for what is intended as a dry wine (otherwise, you have Recioto). The grapes are dried anywhere from three weeks to three months. The high sugar content in the wines translates to a high percentage of alcohol, usually around 15 to 16% ABV. The wine is then aged in oak, these days usually the Slovenian variety, for a minimum of two years before release. Amarones have significant aging potential and can last under the right bottle storage conditions for decades before consumption.

Amarone can be produced anywhere within the Valpolicella zones in the Veneto. Amarone Classico and Amarone Valpantena are labeled as such to demarcate the specific growing zones of its source grapes. Grappa di Amarone is marc produced from the leftover pomace of Amarone production, and Recioto is the sweeter version.

But when it’s not produced for grappa, the discarded grape skins are sometimes used by certain thrifty vintners to add some zing and tannic complexity to Valpolicella table wine. The wine and skins are combined to undergo a second fermentation and released as Valpolicella Ripasso. These can often be quite delicious and an affordable way to get a taste of what some consider a “baby Amarone.” ~Amanda Schuster
